Allora Butchery competes again

Allora Butchery is a Queensland champion for their chicken, cheese and chive sausages and, although recently missing out on the national title, they are back competing again this weekend in the hope of securing that elusive win.

They will compete in Chinchilla in the Outback Region Sausage King competition to hopefully proceed to the State and then national competitions.

Owner Grant Lollback said their Queensland title had been well worth the effort.

“When we won State, we had people from Brisbane and the Gold Coast buy from us. We started with selling 10 kilograms a week (of the chicken, cheese and chive sausages), to 80 kilograms a week after we won State,” Mr Lollback said.

“That’s the ultimate goal; to win the nationals,” he said.

The sausages are judged on presentation, composition, and big points are awarded for taste.

“We take pride in our fresh ingredients. What I look for is the flavour that I like myself,” he said.

His 14-year-old son, Mitchell, has developed a recipe of his own, which he will take to this weekend’s competition.

Allora Butchery’s Melissa Ziser is also an award-winner, receiving some placings at the Butchers Choice Award last year.
